Apricot Ginger Bites

This recipe will not only satisfy your sweet tooth, it is made with all natural ingredients so you can feel good that you are still eating something healthy.

What I love most about them, is they are so rich in flavor that it takes just one to satisfy my craving.  I make a new batch every week, and they taste simply divine with my morning tea.

Apricot Ginger Bites

  • 1/2 cup raw almonds
  • 1 cup organic dried apricots
  • 1/2 cup organic coconut flakes
  • 1/2 teaspoon cinnamon
  • 1 medium-sized orange
  • small piece of ginger
  • 1/4 cup raw almonds and coconut flakes

In your food processor, take about 1/4 cup of raw almonds and coconut flakes combined and chop them into a powder to use for rolling the bite sized balls in, and set aside.

Then chop 1/2 cup of raw almonds until they are kind of chunky and set aside.

Add 1 cup of dried apricots to the food processor and pulse until they are broken down.

Peel and grate a small piece of ginger and add to the food processor.

Grate the peel from a medium-sized orange and add to the mix along with the squeezed juice from the entire orange.

Continue by adding back the 1/2 cup of raw almonds you just chopped, the coconut and the cinnamon.

Pulse all together until combined and gooey.

Roll them into bite sized balls and coat them with the almond coconut powder.

As you can see from the video clip below, I am a big fan of Trader Joe’s.  They had everything I needed to make these wonderful bite sized treats.  The original recipe is  from the bog at medicalmedium.com. Their recipe called for more orange grind and less juice.  I found that just using the entire orange was enough for the rind and the extra juice makes them nice and moist.
